Zucchini Boats
Healthy, low carb and very easy! They fit a lot of diets as they are gluten free, can be made dairy free, and can be paleo too. They are made with zucchini so it helps the family eat vegetables without any complaints. Made with ground turkey, ground beef, or sausage so they are very versatile. Can be made vegetarian as well with chopped mushrooms, rice and cheese. Basically you can stuff them with anything you have on hand! Main course or side dish—they are very satisfying for lunch or dinner.
Ingredients:
- 3–4 large zucchini
- 1 package ground beef, turkey, turkey sausage, or pork (I use Jennie-O spicy turkey sausage casings removed)
- 1/2 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 3 tablespoons creme fresh (You can also use sour cream.)
- 1–2 tablespoons tomato paste (I use the one from Trader Joe’s from a tube.)
Directions:
- Preheat oven to 350 degrees.
- Wash and dry the zucchini.
- Cut the zucchini in half lengthwise.
- Scoop out the seedy flesh of the zucchini with a spoon making a “boat.”
- Brown the 1/2 chopped onion in 1 tablespoon of olive oil.
- Add your meat, and sauté until it is brown.
- Break up the meat/sausage to make it very smooth.
- Add 1–2 tablespoons of tomato paste and brown along with the meat.
- Once browned, remove from heat and add 3 tablespoons of creme fresh or sour cream (if you like it creamy).
- Add filling into each boat until filled.
- Top with grated Parmesan cheese.
- Bake at 350 for 30 minutes.
