quick-fix salmon appetizer
I came up with this recipe when I needed to quickly fix lunch for my husband, Dennis. I have learned that the best creations often come when you need to work with what’s in your pantry and fridge. This super easy finger-food takes only minutes to make and fits any budget. Prepare it as a fresh and inviting appetizer when friends drop by. Bon appétit!
Ingredients
1 can Pink Alaskan salmon, chopped
6 mini bell peppers (red, yellow) seeded and chopped
1/2 cup sweet onions, finely chopped
2 tablespoons mayonnaise (or vegan mayo)
1 bunch Romaine lettuce, washed
1-2 radishes, thinly sliced
salt and pepper, to taste
Directions
- In a small bowl, mix salmon, onions, bell pepper, mayo and salt and pepper to taste.
- Arrange mixture on a Romaine leaf; garnish with sliced radishes and black pepper.
