Fast and Fantastic Roasted Fish
This recipe will take you just 5 minutes to make and 15 to bake! You can use almost any kind of fish for this; I happen to have mahi mahi this time. I love this served with something simple like roasted broccoli and quinoa.
Ingredients:
- 4 (8-ounce) fish fillets
- Kosher salt and freshly ground black pepper
- 8 ounce mayonnaise (or sour cream)
- 4 tablespoons Dijon mustard
- 2 tablespoons minced shallots or white onion
Directions:
- Preheat the oven to 425 degrees F.
- Line a sheet pan with parchment paper or foil. (You can also use an ovenproof baking dish.) Place the fish fillets, skin side down, on the sheet pan. Sprinkle with salt and pepper.
- Combine the mayonnaise, mustard, shallots, and capers. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it’s done. The fish should flake easily at the thickest part. Be sure not to overcook it. Enjoy!

Making it tonight! I noticed there is no measurement for the capers. I'm guessing 2 T?
