Dark chocolate avocado cookies are so easy to make and are simply delicious. There is no dairy (depending on the chocolate chips you choose), no soy, and no gluten. How can this be? The answer: avocado. It acts as a binder and a fat. Don’t worry—it’s a healthy fat of course!

Ingredients:

  • 1/2 cup mashed avocado
  • 1/2 cup coconut sugar
  • 1 egg
  • 1/2 cup dark cocoa powder
  • 1/4 cup dark chocolate chunks
  • 1/2 teaspoon baking soda

Method:

Preheat oven to 350 F.

  1. Mix together the coconut sugar, avocado, and egg using an electric mixer or blender. It’s important to make sure everything is well blended. If you used a blender, scoop the contents into a bowl.
  2. Add cocoa powder and baking soda; stir until mixed.
  3. Now the best part: stir in chocolate chips.
  4. Line a baking sheet with parchment paper, silpat, or oil.
  5. Form cookies by dropping a small spoonful of dough onto the baking sheet.
  6. Bake for 8–10 minutes.
  7. Remove from the oven and let them cool on a rack.
