Chicken Corn Chowder
This is a great recipe that is quick and easy to fix. You can have a homemade soup ready for your family to eat in less than 30 minutes. My family especially loves this soup served with fresh rolls and butter.
Ingredients:
- 1 teaspoon oil
- 1/2 pound Dutch baby potatoes, diced but not peeled
- 1 pound chicken breasts, cut in pieces
- 3 green onions, chopped
- 2 tablespoons of flour
- 1 chicken bouillon envelope
- 2 cups milk
- 1 14-ounce can creamed corn
- Salt and pepper to taste
Directions:
In a soup pot, toss your potatoes in oil. Cover and cook over medium heat, stirring often until tender. Add green onions.
Sprinkle flour over chicken; stir to coat. Cook in grill pan until cooked through.
Add chicken, bouillon, milk, and corn to your pot of potatoes. Cover again and place over high until the mixture comes to a boil and thickens slightly, stirring occasionally. Season with salt and pepper to taste.
Makes 7 servings.
