This flavorful salmon is quick and so easy to prepare!

Ingredients:

  • 2–4 salmon fillets
  • 1 bottle Yaki Teriyaki Sauce with Poppy Seeds (available at Trader Joes)
  • 1 jar Wasabi Mayonnaise (available at Trader Joes)
  • Furikake seasoning* (available at Japanese grocers and online)
  • Crushed pineapple (optional)

Directions:

Preheat oven to 350 degrees F.

  1. Put salmon in a glass 9″x13″ baking dish, skin side up, and pour teriyaki sauce over it. (For extra flavor, add a little crushed pineapple to the teriyaki sauce.) Let it marinate in the refrigerator for 30–45 minutes.
  2. After marinating, turn salmon to meat side up and bake it for 10 minutes. Remove it from the oven. Spread a thin coat (more if you like it spicy) of Wasabi Mayonnaise on top. Sprinkle 2 teaspoons (or more) of Furikake seasoning on top and place it back in the oven. Bake it for another 10 minutes or until the salmon is cooked.
  3. Remove and let stand for a few minutes before serving.

Serve with your favorite brown or basmati rice (you can put some of the sauce on the rice).

I like to serve this with steamed green beans or a fresh green salad.

 

*Furikake is a Japanese seasoning meant to be sprinkled on top of cooked rice, vegetables, and fish. It typically consists of a mixture of dried and ground fish, sesame seeds, chopped seaweed, sugar, and salt. But it is also used for eggs, salads, soups, pasta, and sushi rolls. This classic blend of sea vegetable and toasted sesame seeds combines for a sweet, salty, crunchy Asian taste sensation.
