Tender, flaky, and slightly sweet. For a southern-style taste of homemade goodness these biscuits really hit the spot!

Ingredients

2 cups mashed sweet potato**

1 ¼ cup buttermilk OR half-n-half

1 large egg

2 tbsp maple syrup

8 tbsp butter, melted

 

4 cups flour

2 tsp salt

6 tbsp baking powder

2 tsp baking soda

 

**Cut 2 medium sized sweet potatoes into cubes, add to a pot of boiling water and cook until very tender, 13-15 minutes. Drain water and mash with a fork.

 

 

Directions

 

Preheat oven to 450° and line a baking sheet with parchment paper.

 

  1. In a medium bowl, combine the wet ingredients and set aside.

  1. In a large bowl, combine the dry ingredients. Add the wet ingredients to the dry and stir, just until combined. Do not overmix.

 

  1. Turn out onto a floured surface. Roll out (or handpress) dough to a 1-inch thickness. Use a biscuit cutter or an empty jar to cut into rounds. Place on baking sheet.

  1. Bake for 10-15 minutes or until the tops are just golden. Serve warm with butter and honey, or apple butter. Yum!

 

Note: Store any leftovers in the refrigerator. Also, due to a natural occurrence when cooked potato hits the air, green spots can sometimes appear in the biscuits.
