Shrimp Tacos with Strawberry Salsa and Feta
These tacos are the perfect combination of summer and spice and a hint of salty! I bet just one isn’t enough!
Ingredients:
- Uncooked Shrimp (I prefer the frozen tail-on shrimp that I can quickly defrost under cool water)
- Corn tortillas
- Feta cheese
Strawberry salsa:
- 1 pint strawberries, diced
- 1 avocado, diced
- 1 jalapeno, seeds removed (unless you like the extra heat) and finely diced
- 2 green onions, thinly sliced
- 1 handful chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
Directions:
- Prepare your strawberry salsa and refrigerate while you prepare your tacos.
- On a heated grill, cook your shrimp so they are pink on both sides (usually 1–2 minutes per side). Do not overcook but make sure they are opaque in color.
- Add your tortillas to the grill and lightly warm on each side.
- Layer shrimp, feta, and salsa into your tortillas and serve warm!
