These tacos are the perfect combination of summer and spice and a hint of salty! I bet just one isn’t enough!

Ingredients:

  • Uncooked Shrimp (I prefer the frozen tail-on shrimp that I can quickly defrost under cool water)
  • Corn tortillas
  • Feta cheese

Strawberry salsa:

  • 1 pint strawberries, diced
  • 1 avocado, diced
  • 1 jalapeno, seeds removed (unless you like the extra heat) and finely diced
  • 2 green onions, thinly sliced
  • 1 handful chopped cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

Directions:

  1. Prepare your strawberry salsa and refrigerate while you prepare your tacos.
  2. On a heated grill, cook your shrimp so they are pink on both sides (usually 1–2 minutes per side). Do not overcook but make sure they are opaque in color.
  3. Add your tortillas to the grill and lightly warm on each side.
  4. Layer shrimp, feta, and salsa into your tortillas and serve warm!
