Raspberry-Lime Iced Tea
This refreshing tea is perfect for a brunch al-fresco, a lunch with the girls or an afternoon pick-me-up on a hot summer day. You control the sweetness of the tea with the simple syrup.
Ingredients:
For the Tea: (makes two quarts)
5 bags Raspberry Zinger tea
6 cups water
1 fresh lime-cut into wedges
For the Syrup: (makes approximately ½ quart)
1 cup sugar
1 cup water
½ pint raspberries
Directions:
Put tea bags into a large bowl. Boil the 6 cups of water and pour over the tea. Steep 10 minutes and remove the bags.
As you’re letting the tea steep, combine the sugar and water in a small pan and bring it to a boil, making sure all the sugar has dissolved. Remove from the heat and add the raspberries. Let the syrup cool to room temperature.
Mix together the tea and syrup to taste. Put ice into 12-oz glasses; squeeze lime wedges into each glass. Pour in tea and garnish with a sprig of fresh mint.
*Note: Simple Syrup is great to have handy in your refrigerator all summer long. Equal parts of sugar and water will make any amount you like. Once your syrup has cooled, store it in a well-sealed glass container for up to one month in the refrigerator.
