Poppy Seed Salad
This simple salad can really be made all year! It is light and refreshing. The blend of feta with berries and candied pecans really make the salad pop with flavor! You can use strawberries or raspberries, and the optional pomegranate seeds give it not only an added crunch, but an extra burst of flavor as well. Enjoy!
Ingredients:
- Fresh romaine lettuce
- Crumbled feta cheese
- Red onion
- Fresh strawberries (apple slices are good too)
- Fresh candied pecans, chopped
- Fresh pomegranate seeds, if desired
Dressing Ingredients:
- 1/2 cup sugar
- 2 teaspoons Dijon mustard
- 1 cup olive oil
- 1 1/2 teaspoons poppy seeds
Directions:
- Prepare your strawberry salsa and refrigerate while you prepare your tacos.
- Toss the salad and serve with chilled dressing when ready.
- Pomegranate seeds are an option in addition to, or in place of, other fruit.
- I also like cherry tomatoes sliced in half long ways and tossed with the salad.
