mini apple-crisps
Got any apples in your kitchen? Great! Just a few more ingredients and you can make this simple, finger-licking delicious dessert!
INGREDIENTS
2-4 Granny Smith apples, peeled and thinly sliced
1 tablespoon cinnamon
¼ cup granulated sugar
1 pie crust (store bought)
½ cup whipping cream
2-3 teaspoons of powdered sugar
INSTRUCTIONS
Preheat oven to 400°
Blend whipping cream and powdered sugar together and whip at high speed with an electric mixer until soft peaks form. Chill until ready to use.
In a mixing bowl, toss apples in sugar and cinnamon until well coated. Spread the apples on a baking sheet (use a silicone non-stick sheet or cooking parchment). Put in the oven for 10-15 minutes until the sugar caramelizes.
Lay out your pie crust. Use a 3-inch cookie cutter to make 8 discs; space them out evenly on a baking sheet. Use a fork to prick the pie disks so they will stay nice and thin as they bake. Bake for 8-10 minutes until golden brown. Cool slightly.
Spoon a generous helping of caramelized apples onto one pie disk (dust with a little powdered sugar if you like). Add a dollop of whipped cream and top with another pie disk. Dust a little more powdered sugar on the pie disk and top with a generous dollop of whipped cream.
Makes 4 delectable desserts. Enjoy!

Since I stay away from grains can I substitute sweet potato slices for the pie crust? I've done that to make quiche and it works very well.
