You will not miss the meat! This vegetarian burger-type sandwich is so delicious, tender, and flavorful. Marinate and grill the Portobello, and place it in a toasted bun for a lunch or dinner meal that you and your friends and family will love.

Ingredients:

  • 4 Portobello mushrooms
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Roasted bell pepper
  • Garlic aioli (see recipe below)
  • Arugula

Garlic Aioli:

  • 2 cloves garlic, pressed
  • 1/4 teaspoon (or more) coarse kosher salt
  • 1/2 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice

Directions:

  1. Turn Portobello mushrooms upside down and, using a spoon, scrape out the brown area near the stem. Remove the stem also. Soak the mushrooms in the marinade for 20–60 minutes.
  2. Cook the mushrooms, either on the stove or on a grill, until tender. Toast the bun and spread on some garlic aioli. Stack the sandwich with roasted pepper, mushroom, and arugula.
