Grilled Portobello Sandwich
You will not miss the meat! This vegetarian burger-type sandwich is so delicious, tender, and flavorful. Marinate and grill the Portobello, and place it in a toasted bun for a lunch or dinner meal that you and your friends and family will love.
Ingredients:
- 4 Portobello mushrooms
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Roasted bell pepper
- Garlic aioli (see recipe below)
- Arugula
Garlic Aioli:
- 2 cloves garlic, pressed
- 1/4 teaspoon (or more) coarse kosher salt
- 1/2 cup mayonnaise
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
Directions:
- Turn Portobello mushrooms upside down and, using a spoon, scrape out the brown area near the stem. Remove the stem also. Soak the mushrooms in the marinade for 20–60 minutes.
- Cook the mushrooms, either on the stove or on a grill, until tender. Toast the bun and spread on some garlic aioli. Stack the sandwich with roasted pepper, mushroom, and arugula.
