Ingredients:

  • 1 1/2 tablespoons grapefruit zest
  • tablespoons granulated or coconut sugar
  • 1 1/4 cups all-purpose flour
  • 1/2 cup white whole wheat flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups full-fat buttermilk
  • 1/3 cup grapeseed oil
  • teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup honey

Toppings (optional):

  • Unsweetened coconut flakes, toasted
  • Honey or maple syrup
  • Grapefruit segments or other fruit

Directions:

Preheat your waffle maker.

  1. In a small bowl, combine grapefruit zest and sugar. Use your fingers to rub the zest into the sugar until it is nice and fragrant.
  2. In a large bowl, whisk together both kinds of flour, baking powder, salt, and the grapefruit sugar mixture.
  3. In a medium bowl, whisk together eggs, buttermilk, oil, vanilla extract, almond extract, and honey.
  4. Pour the wet ingredients into the bowl with dry ingredients and mix just until combined (the batter will be lumpy).
  5. Pour the batter into your waffle maker and cook until golden brown.

Top the waffles with toasted coconut and any other desired toppings. Enjoy!
