Grapefruit Buttermilk Waffles with Toasted Coconut
Your phone rings and friends are coming over. Take a deep breath and pull out the waffle maker! With a few simple ingredients you can add a twist to good old plain waffles.
Ingredients:
- 1 1/2 tablespoons grapefruit zest
- 2 tablespoons granulated or coconut sugar
- 1 1/4 cups all-purpose flour
- 1/2 cup white whole wheat flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups full-fat buttermilk
- 1/3 cup grapeseed oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup honey
Toppings (optional):
- Unsweetened coconut flakes, toasted
- Honey or maple syrup
- Grapefruit segments or other fruit
Directions:
Preheat your waffle maker.
- In a small bowl, combine grapefruit zest and sugar. Use your fingers to rub the zest into the sugar until it is nice and fragrant.
- In a large bowl, whisk together both kinds of flour, baking powder, salt, and the grapefruit sugar mixture.
- In a medium bowl, whisk together eggs, buttermilk, oil, vanilla extract, almond extract, and honey.
- Pour the wet ingredients into the bowl with dry ingredients and mix just until combined (the batter will be lumpy).
- Pour the batter into your waffle maker and cook until golden brown.
Top the waffles with toasted coconut and any other desired toppings. Enjoy!
