Most markets carry Boursin Gournay Cheese. It is a cream cheese that has been seasoned with herbs and garlic. Really, any soft herb cheese will do! Sophisticated and simple, these creamy mashed potatoes have just the right hint of garlic.

 
Garlic Herb Mashed Potatoes

Ingredients

  • 2 packages of Boursin Garlic & Herb Gournay Cheese
  • 1/2 cup of cream or half and half
  • Milk
  • 10 fresh chives, finely chopped
  • 2 1/2 pounds of red or baby yukon gold potatoes
  • Salt and pepper to taste

Directions:

  1. Boil the potatoes until they can be pierced easily by a sharp knife. Drain.
  2. Mash the potatoes, then add the cheese and cream. Depending on the starchiness of the potatoes, add enough milk to obtain the consistency you like.
  3. Season with salt and pepper. Top with fresh chives.

Serves four.
