Garlic Chicken Pesto Pasta
Are you craving pasta? Well, here is a simple recipe that will satisfy your carbo-licious cravings. After making this dish you will find yourself singing, “It’s amore!”
Ingredients:
- 2 chicken breasts, cubed
- 1 tablespoon olive oil
- 2 tablespoons garlic, chopped
- 1/2 tablespoon kosher salt
- 1/2 tablespoon freshly ground black pepper
- 3/4 cup heavy cream
- 1/2 cup Parmesan cheese
- 1/4 cup fresh basil, chopped
- 3 cups penne pasta (or any favorite pasta), cooked and drained
- 3/4 cup cherry tomatoes, halved
- Parmesan cheese to garnish
- Chopped basil to garnish
Directions:
- Heat oil in a pan over high heat. Combine chicken, garlic, salt, and pepper and cook until chicken is browned.
- Mix in heavy cream, parmesan, cherry tomatoes and basil. Stir until evenly combined.
- Bring to a boil and cook until the sauce has reduced (about 5–7 minutes).
- Toss in pasta. Stir until evenly coated. Remove from heat.
- To serve, sprinkle Parmesan and basil on top.
