Looking for a fun way to serve up your favorite summer fruits and veggies? Make this light and deliciously crunchy salad in less than twenty minutes. Perfect for snacks, side dishes or a light entrée on a warm summer evening.

 

Ingredients

Crisp Lettuce Leaves  (I like to use hearts of romaine)

2 English Cucumbers – these are slightly sweet + crunchy, but any cucumber will do

1 Red Bell Pepper, or any color you prefer

1 bunch (16 oz.) Seedless Grapes

1 basket (16 oz.) Strawberries

6-8 tablespoons Sunflower seeds, shell removed

2 tablespoons fresh basil, chopped (optional but brings all the flavors together)

For Dressing:

  • 1 Lime, juiced
  • 4 tablespoons Olive oil
  • Salt, to taste

Makes 8-10 servings

 

Instructions
  1. Rinse all your fruits + veggies, set aside on a paper towel to dry. Putting the lettuce leaves in the fridge until you’re ready to assemble your boat will make them extra cold and crispy!

 

  1. Chop cucumber, bell pepper, and strawberries into bite-sized pieces. Cut grapes in half. Chop the fresh basil. Place into a bowl and chill in the fridge while you make your dressing.

  1. In a small bowl or jar, juice the lime and combine with olive oil and salt. Pour dressing over fruit + veggies, a little at a time, add sunflower seeds and toss to coat.

  1. Scoop into fresh lettuce cups just before serving. Garnish with more sunflower seeds if you like.
