fruit + veggie lettuce boats
Looking for a fun way to serve up your favorite summer fruits and veggies? Make this light and deliciously crunchy salad in less than twenty minutes. Perfect for snacks, side dishes or a light entrée on a warm summer evening.
Ingredients
Crisp Lettuce Leaves (I like to use hearts of romaine)
2 English Cucumbers – these are slightly sweet + crunchy, but any cucumber will do
1 Red Bell Pepper, or any color you prefer
1 bunch (16 oz.) Seedless Grapes
1 basket (16 oz.) Strawberries
6-8 tablespoons Sunflower seeds, shell removed
2 tablespoons fresh basil, chopped (optional but brings all the flavors together)
For Dressing:
- 1 Lime, juiced
- 4 tablespoons Olive oil
- Salt, to taste
Makes 8-10 servings
Instructions
- Rinse all your fruits + veggies, set aside on a paper towel to dry. Putting the lettuce leaves in the fridge until you’re ready to assemble your boat will make them extra cold and crispy!
- Chop cucumber, bell pepper, and strawberries into bite-sized pieces. Cut grapes in half. Chop the fresh basil. Place into a bowl and chill in the fridge while you make your dressing.
- In a small bowl or jar, juice the lime and combine with olive oil and salt. Pour dressing over fruit + veggies, a little at a time, add sunflower seeds and toss to coat.
- Scoop into fresh lettuce cups just before serving. Garnish with more sunflower seeds if you like.
