fresh and simple dressings
We asked our good friend, Chef Jackie Rovere, to share some favorite dressing recipes with us. So fresh and simple, keep these on hand to dress your salads and add a bit of zest to any dish. Thank you Jackie!
Balsamic Sherry Vinaigrette
This is a perfect go-to salad dressing! Low in fat and high in flavor, the balsamic is sweet while the sherry delivers a bit of a vinegar-y punch. Together, a perfect pair! I make a double batch and leave it in the fridge for quick salads, a simple glaze, or even to drizzle on roasted veggies.
1/2 cup good balsamic vinegar
1/4 cup sherry vinegar
1/4 cup olive oil or avocado oil
1 tablespoon Dijon mustard
1-2 teaspoons herbs de provence
pinch of sea salt
Combine all ingredients in a bowl and whisk together—or even better yet, throw it all in a mason jar and shake and serve! Makes 1 cup of dressing. Keeps well in the fridge for a few weeks.
Maple Dijon Dressing
This super low-fat dressing has so much flavor. It is tangy, sweet, creamy and will coat every lettuce leaf, which makes it super satisfying when you crave something decadent without all the calories! I like to serve this over mixed greens with chicken, chopped cooked bacon, blackberries, goat cheese crumbles, and green onions. Yum! You can also top a chicken breast or salmon filet with this dressing before you pop it into the oven.
1/2 cup Dijon mustard
3 tablespoons maple syrup
1/4 cup apple cider vinegar
1 tablespoon water
Combine all ingredients in a bowl and whisk together. Or put in a mason jar and shake well. Makes 1 cup of dressing. Keeps well in the fridge for a few weeks.
