Fresh and Easy Oats
With summer behind us (sigh) it’s time to wake up and get the family going early. Don’t forget breakfast! Let this simple recipe make your back-to-school mornings a little bit easier.
My family enjoys the Swiss Berry Oatmeal at Corner Bakery so I decided to give this a try. These are oats you do not cook. Milk and yogurt soften the oats overnight in the refrigerator. You can add whatever you want: almond butter, toasted nuts, seeds, flax, maple syrup. This basic recipe will help you get started, but feel free to use your imagination!
Ingredients:
1/4 cup uncooked old-fashioned oats
1/3 cup milk (use coconut or almond milk if you prefer)
1/4 cup Greek yogurt, plain or flavored
1/4 teaspoon vanilla extract
1 teaspoon Chia seeds
1 tablespoon jam of your choice (I use raspberry)
1/4 cup fresh raspberries
Additional chopped or dried fruit of your choice (optional)
To Make:
- Add all ingredients into a half-pint mason jar; shake well or stir.
- Cover and refrigerate overnight.
- You can eat right out of the jar or scoop it into a bowl.
- Add a little more milk if you like.
Optional: I like to add apples, strawberries, or blueberries. You can also add dried fruit or toasted nuts.
This oatmeal is 230 calories if you follow the recipe above and use skim milk. As breakfast is the most important meal of the day, it’s a healthy way to start your day!

If I replaced oats with cooked steel cut oatmeal, do you think it would work? What an excellent way to start anyones day off! I bet you could make a dozen in advance before the weeks start!

I love making these. I do make about 3-4 at a time so I have breakfast for a few days ready. I also change up ingredients so they aren't all the same. Great easy and delicious meal.
