My name is Gia and I’ve been a raw vegan for a year and a half! What in the world does that even mean? Well, simply put, I eat only fruits and veggies, nuts and seeds. Nothing cooked or heated above 115° F.
I love to show how simple, quick, and delicious vegan food can be. My strategy is to keep it simple. Let’s be honest—if it’s complicated, it’s not happening. Here are three of my quick-fix favorites, which I shared in a demo for Girl Talk 2018.

Pesto Pasta: Deliciously Low Carb
I’m a huge fan of pasta! I mean, it’s comfort food at its finest! Add a rich sauce and all you really need is a fork! All you mac & cheese fans, rejoice because I have the perfect pasta substitution. Check out the recipe here.
Collard Greens Wraps with Red Pepper Sauce
The other day I saw gorgeous collard green leaves and just had to create these wraps. Paired with a 4-ingredient sauce, this is the perfect lunch to make in advance or on the go—forget the drive-thru, this wrap is better! Get the recipe here.
Oatmeal Cream Pies
I remember those Little Debbie cream pies that came in a box of 10. I’d eat nearly all of them in one sitting! I loved oatmeal cream pies. Still do, but my standards for healthy ingredients has changed and that’s led me to create delicious treats to enjoy without any junk ingredients. You’ll find the recipe here.

Hi Gia, The Lord completely confirmed for me again that my clean eating is doing me good. My daughter became vegan 2 year ago and in return I have radically changed the way I eat and look at food. I was so blessed by your sharing and recipes on Thursday. You mentioned cushings. My friend has cushings and I have been trying to encourage her to eat better. Could you share a little that I could pass on or have you written on what circumstances moved you to become vegan ?

Hi Carol. I'm so happy to know you were blessed by the things I shared at the demo. My husband and I were motivated to become vegan after dealing with pain, indigestion, low energy...all things related to food. I mentioned that my husband had Crohn's Disease. Cushings is different, but the best treatment still includes a healthy diet and exercise plan. I'd be happy to share recipes and tips on how we eat healthy. Sometimes a little encouragement and accountability are just what we need to change our eating habits for the better. Check out my recipes above.
