Ingredients

1 lb. boneless, skinless chicken breasts, pounded thin

1 tablespoon oil

1 tablespoon butter

4 cloves garlic, chopped

1 pinch red pepper flakes (optional)

½ cup chicken broth

1 lime, juice and zest

Salt and pepper to taste

2 tablespoons cilantro, chopped

Directions
  1. Heat oil and butter in a skillet over medium-high heat until bubbling; add chicken, salt and pepper, and cook until lightly golden brown, 3-5 minutes each side. Remove chicken from the skillet and set aside.
  2. Add garlic and red pepper flakes; cook until fragrant, about one minute. Add chicken broth and deglaze the pan by scraping up any brown bits from the pan with a wooden spoon, while the broth sizzles.
  3. Add lime juice and zest; season with salt and pepper.
  4. Remove skillet from heat and add the chicken back in. Garnish with cilantro and lime slices.
