Chinese Chicken with Mango Salad
This is always a hit! It makes all your taste buds happy! This is especially great for your summer get-togethers.
Ingredients:
Salad:
- 3 chicken breasts, baked or grilled with Teriyaki sauce, sliced into strips
- 2 heads Boston Bibb lettuce
- 4 green onions, sliced thin, in 1/2 half inch diagonal strips
- 1 bunch cilantro leaves, chopped
- 2 small packages slivered almonds, toasted or browned in a pan with a small amount of oil (place on paper towel to drain)
- 12 to 15 fried wontons (I cut 12 to 15 wonton wrappers into 3/4 by 2-inch strips and fry them in hot oil. Remove from oil to cool and drain on paper towels.)
- 1 or 2 fresh mangoes, cut into approximately 3/4-inch cubes
Dressing:
- 1 1/2 teaspoons dry mustard
- 1/3 cup sugar
Mix sugar and mustard together, then add
- 2 tablespoons soy sauce
- 3 tablespoons sesame oil
Then add
- 3/4 cup Canola oil
- 1/2 cup rice wine vinegar
- 2 tablespoons black sesame seeds
(This will be slightly more dressing than you need for this salad, but it keeps well in the refrigerator.)
Directions:
- Mix lettuce, cilantro, and green onions together. Toss with small amount of dressing then add remaining ingredients and dressing to taste.
- Add the wontons last, just before serving, so they are still crunchy. You may substitute a can of Chinese noodles or half a package of ramen noodles (broken into small pieces), but wontons taste best!

They say a picture can say a thousand words and I see the photograph of your grandaughter at the beach with a kabob in her hand. The photo speaks to me of love for a child. What makes up the kabob? For I am thinking a marshmellow or two, and a tangerine. Stella?
