Blackberry Crisp
My parents have a blackberry bush in their backyard. Come summertime, it’s amazing how many berries come off that bush! They sent us home with a huge bowl full of them, so Rylie and I made this sweet treat that everyone loved.
Ingredients:
- 4 cups of fresh or frozen blackberries
- 4 tablespoons of sugar
- 2 tablespoons of cornstarch
- 3 tablespoons of water
- 1 teaspoon of lemon juice
- 1 cup of quick-cooking oats
- 1/2 cup of flour
- 1/2 cup of brown sugar
- 1 teaspoon of ground cinnamon
- 1/2 cup of cold butter
- Vanilla ice cream
Directions:
Place blackberries in a 2-quart baking dish. In a small bowl, combine sugar, cornstarch, water, and lemon juice. Stir until smooth. Pour mixture over the berries and set aside. Combine the oats, flour, brown sugar, and cinnamon. Cut in the butter until crumbly. Sprinkle mixture over berries.
Bake uncovered at 375 F for 20–25 minutes or until filling is bubbly. Serve warm with ice cream and enjoy.
