I know you can make this recipe from scratch, by soaking your own beans and making your own barbecue sauce, but when you are a busy mom, sometimes a quick, “partially homemade” recipe is just what you need. This is how I have always made baked beans for my family!

Serves up to 12.

Ingredients:

  • 4 slices bacon
  • 1/2 medium onion, diced small
  • 2 28-ounce cans of pork and beans
  • 3/4 cup barbecue sauce (your favorite or make it yourself)
  • 2/3 cup brown sugar
  • 2 tablespoons cider vinegar
  • 1 teaspoon dry mustard or 1 tablespoon Dijon

Directions:

Adjust your oven rack to lower-middle position and heat the oven to 325 degrees F. Fry bacon in a large, deep sauté pan or skillet until bacon is cooked and has released about 2 tablespoons of drippings. Remove bacon from the pan and drain it on paper towels. Add onions to the drippings in the pan and sauté until tender, about 5 minutes. Add beans and remaining ingredients. Bring to a simmer. Pour flavored beans into an ovenproof pan. Top with bacon. Bake about 2 hours until the beans are bubbly and the sauce is the consistency of pancake syrup. Let stand to thicken slightly, and serve.
