Baked Kale
This simple way to prepare kale will be your new favorite side dish or afternoon snack! We find it replaces the craving for chips with the kids too!
Preheat your oven to 375 degrees F.
Rinse 1 bunch of fresh kale and pat it dry thoroughly.
Remove and discard the thick core and roughly chop the leaves.
Toss with 1 tablespoon olive oil and fresh ground salt and pepper in a large bowl.
Spread on a large baking sheet. The kale does not need to be in a single layer; it will shrink as it cooks.
Bake for 15 to 20 minutes, stirring every five minutes or so, until the leaves are tender and browned crisp on the edges.
You can add more salt or pepper to taste before serving.

I recently retired and wanted to become a better cook. I know how good Kale is for you but I wasn't sure what to do with it. Putting in a morning Shake was about my best choice for getting it into my husband. Thank you for this recipe and all your others. May
