White Chocolate Berry Trifles
This is a yummy summer treat that my family loves. It doesn’t take much time and it looks so pretty.
Ingredients
- 1 1/2 pints strawberries, hulled
- 1/4 cup granulated sugar
- 2 tablespoons orange juice (I have used cranberry and other juices.)
- 1 cup raspberries
- 1/2 cup each of blueberries and blackberries
- 3 ounces white chocolate, chopped (I use white chocolate chips.)
- 1/2 cup mascarpone cheese
- 1 cup heavy cream
- 2 tablespoons confectioner’s sugar
- Sponge cake or angel food cake, cut into 3/4-inch cubes
- 6 small strawberries for garnish, if you like
Directions
- In a food processor, puree 2 cups of strawberries, granulated sugar, and 2 tablespoons of orange juice until smooth; pour into bowl. Slice remaining strawberries. Stir sliced strawberries, raspberries, blueberries, and blackberries into strawberry puree.
- In a large bowl, melt white chocolate in microwave (I use a double boiler; it melts better, I think). After fully melted, allow to cool slightly. Fold in mascarpone cheese. In a medium bowl, whip heavy cream and confectioner’s sugar just until stiff. Fold cream into chocolate mixture, just until combined.
- Place half of sponge cake (or angel food cake) cubes into 6 glasses or dishes. Spoon half of berry mixture over cake. Top with half of cream mixture, spreading evenly. Repeat with remaining cake, berries, and cream. Serve, or cover and refrigerate 1 hour or overnight. Garnish with a strawberry and sprig of mint.
Delicious! You may want to double the recipe, because they go fast.
