Watermelon Salad
This is a simple, sweet salad, and the macadamia nuts add a great crunch!
Watermelon Salad
Ingredients:
- 3/4 cup of macadamia nuts, toasted
- 2 1/2 – 3 pounds of watermelon
- 1 bag of baby mixed greens (5-6 ounces)
- 3/4 cup of crumbled gorgonzola cheese
- 1/2 small red onion, thinly sliced (optional)
Directions:
- Arrange melon slices around edge of plate or platter.
- Toss greens in bowl with the vinaigrette and serve in center of melon.
- Sprinkle with cheese, nuts, and onion, and serve.
Raspberry Vinaigrette:
Ingredients:
- 1/4 cup of seedless raspberry jam
- 1/4 cup of cranberry juice cocktail
- 2 tablespoons of balsamic vinegar
- 6 tablespoons of vegetable oil
- Salt
- Fresh ground pepper
Directions:
- Puree in blender until smooth.
- Cover and chill.
(This can be made up to 2 days in advance.)
