This is a simple, sweet salad, and the macadamia nuts add a great crunch!

Watermelon Salad

Ingredients:

  • 3/4 cup of macadamia nuts, toasted
  • 2 1/2 – 3 pounds of watermelon
  • 1 bag of baby mixed greens (5-6 ounces)
  • 3/4 cup of crumbled gorgonzola cheese
  • 1/2 small red onion, thinly sliced (optional)

Directions:

  1. Arrange melon slices around edge of plate or platter.
  2. Toss greens in bowl with the vinaigrette and serve in center of melon.
  3. Sprinkle with cheese, nuts, and onion, and serve.

Raspberry Vinaigrette:

Ingredients:

  • 1/4 cup of seedless raspberry jam
  • 1/4 cup of cranberry juice cocktail
  • 2 tablespoons of balsamic vinegar
  • 6 tablespoons of vegetable oil
  • Salt
  • Fresh ground pepper

Directions:

  1. Puree in blender until smooth.
  2. Cover and chill.
