Warm Spinach Salad with Apples, Bacon and Cranberries
This is a delicious and easy to make salad! The simple ingredients go perfectly with the warm dressing and create a great salad that can be eaten as an accompaniment or a light meal. This is great for entertaining, too, because all the prep work can be done ahead of time so you can simply prepare the dressing and serve.
Ingredients
- 1 cup sliced granny smith apple (about 1 small)
- 3/4 cup thinly-sliced red onion
- 1/2 cup dried cranberries
- 1 (10oz) package fresh baby spinach
- 1/3 cup balsalmic vinegar
- 1 tbsp sugar
- 2 tbsp cranberry juice
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp fresh ground black pepper
- 2 tbsp sour cream
- 2 bacon slices, cooked and crumbled
Directions
- Combine first four ingredients in a large bowl; toss well.
- Combine vinegar, sugar, juice, mustard, salt and pepper in small saucepan. Bring to a boil over med heat; cook for 1 minute.
- Remove from heat, and stir in sour cream.
- Drizzle warm dressing over spinach mixture; toss well.
- Sprinkle with bacon; serve immediately.
