Vegetable Crudités with Greek Yogurt Dip
“Crudités” are appetizers consisting of a variety of raw vegetables. The word is derived from the French for “raw” or “crude.” Your crudités may be raw…but these elegant and colorful arrangements will certainly not be crude!
The options are endless for these beautiful crudités. You can make a large “bouquet” using bamboo skewers or individual-size ones with the dip on the bottom.
For the Greek Yogurt Dip:
- 8 mint leaves, chopped
- 4 cups of plain Greek yogurt
- 1 tsp fresh lemon juice
- 3 garlic cloves, finely chopped
- Sea salt and pepper, to taste
Mix all ingredients in a bowl. Place 1/4 cup of the yogurt in small plastic cups, making sure to keep sides clean. Set aside in refrigerator until you are ready to assemble.
For the Crudités:
Cut any of the following vegetables for assembly:
- Heirloom tomatoes or regular tomatoes
- Cauliflower
- Asparagus (blanched)
- Cucumber
- Lettuce
- Broccoli
- Parsnips
- Carrots
