This is a simple BBQ Chicken pizza your whole family will love! With just a few simple ingredients, these individual tortilla pizzas make a quick and easy meal for any night of the week. Also perfect for game day or movie night!

Ingredients

For one small pizza:

1 large (12 inch) burrito-size flour tortilla

¼ cup bbq sauce

¼ tsp adobo sauce

½ cup rotisserie chicken, chopped

½ cup shredded cheese (I use a Mexican Cheese blend)

¼ cup red onion, cut into slivers

½ cup tomatoes, chopped

¼ cup cilantro

2-3 green onions, chopped

(To make individual pizzas, use 4 taco-size flour tortillas and double the amount of remaining ingredients.)

 

 

Instructions
  1. Preheat oven to 350°. Line a baking sheet with foil and place tortilla(s) on it.

 

  1. In a small bowl, mix bbq sauces and adobo sauce together. Brush the mixture evening onto the tortilla.

  1. Sprinkle chopped chicken over the sauce mixture. Sprinkle grated cheese evenly over the chicken. Evenly distribute the red onion slivers on top.

 

  1. Bake for 8-10 minutes or until cheese is melted and the edges of the tortilla are golden brown and lightly crispy. The pizzas bake quickly, so keep a close eye on them!

 

  1. Remove from oven and cool slightly. Garnish with chopped tomatoes, green onion and fresh cilantro.
