A little bit sweet and a little bit salty, this salad is chock-full of healthy ingredients! It pairs well with grilled chicken or salmon, but hearty enough to have on its own.

Ingredients

6 cups fresh kale, finely chopped (stems removed)

1 heaping cup strawberries, quartered

1 avocado, sliced or diced

1 cup grilled corn

½ cup feta crumbles

¼ cup diced red onion

1/3 cup pistachios (shelled, roasted, salted)

 

For the dressing:

1 bunch cilantro, chopped

1/3 cup avocado oil

3 tbsp lime juice, freshly squeezed

1 tbsp honey

1 clove garlic, minced

1 jalapeno, seeded

1 tsp Dijon mustard

¼ tsp cumin

¼ tsp salt (plus more to taste)

Dash of pepper, to taste

 

 

Instructions

 

  • To make dressing, add all ingredients to a blender or food processor and combine until smooth. Note: The seeded jalapeno adds plenty of flavor but does not make the dressing spicy. If you want some heat, add some of the seeds or the white flesh of the jalapeno.

 

  • Now for the salad! Add finely chopped kale to a large bowl; pour the dressing over the kale and thoroughly combine, using tongs or clean hands. Let it sit for at least ten minutes so the kale really absorbs the dressing.

 

  • Add strawberries, avocado, corn, feta crumbles, diced red onion and pistachios. Use tongs to give it a toss until combined. Enjoy!
