This delicious recipe for rice is a great accompaniment to any Mexican style meal. The simple ingredients and quick cooking time make it a fresh alternative to your typical "boxed rice." The bacon, when cooked in the pan first, adds so much flavor!

Ingredients

  • 2 slices of bacon
  • 1/2 cup of chopped onion
  • 2 cloves of garlic, minced
  • 1 cup of rice
  • 2 cups of chicken broth
  • 1 can (14.5oz) of sliced tomatoes, drained; or 1 cup of halved grape tomatoes
  • 1/3 cup of sliced green onions

Directions

  1. Cook bacon in a skillet until crispy.
  2. Remove bacon and crumble.
  3. Add onion and garlic to pan and cook four minutes on medium heat
  4. Add rice, chicken broth, and tomatoes. Stir to combine and bring to a boil.
  5. Cover pan, reduce heat, and simmer for 20 minutes.
  6. Stir in bacon and green onion. Move to serving dish and serve.
