Spanish Rice
This delicious recipe for rice is a great accompaniment to any Mexican style meal. The simple ingredients and quick cooking time make it a fresh alternative to your typical "boxed rice." The bacon, when cooked in the pan first, adds so much flavor!
Ingredients
- 2 slices of bacon
- 1/2 cup of chopped onion
- 2 cloves of garlic, minced
- 1 cup of rice
- 2 cups of chicken broth
- 1 can (14.5oz) of sliced tomatoes, drained; or 1 cup of halved grape tomatoes
- 1/3 cup of sliced green onions
Directions
- Cook bacon in a skillet until crispy.
- Remove bacon and crumble.
- Add onion and garlic to pan and cook four minutes on medium heat
- Add rice, chicken broth, and tomatoes. Stir to combine and bring to a boil.
- Cover pan, reduce heat, and simmer for 20 minutes.
- Stir in bacon and green onion. Move to serving dish and serve.
