One thing I love about summer is roasting marshmallows over a fire, and putting them between two graham crackers with a piece of chocolate. . . classic and delicious! Well here is a recipe with a twist on the original. It requires the same three main ingredients—marshmallow, chocolate, and graham crackers. But this is made in the comforts of your kitchen, and can be enjoyed year-round!

You will need:

  • 36 2-inch rectangle graham crackers
  • 1 14-oz. can of sweetened condensed milk
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 12 to 14-oz. semi sweet chocolate chips (I get the bag from Trader Joes)
  • 1 cup small marshmallows

Directions:

  1. Preheat your oven to 350 degrees. Grease an 8-inch square pan. Get your kids, friends, husband. . . whoever is there to help, and crush up those graham crackers! An easy way is to put them in a large ziplock bag, close it up and crush them with a rolling pin. You want the graham cracker crushed until it is fine crumbs.
  2. In a large bowl, put the sweetened condensed milk, vanilla, and salt together and mix with a large spoon. Add the chocolate chips, marshmallows, and graham crackers. Mix well. Batter will be really stiff.
  3. Spoon the batter into the pan, and press down with your hands until it’s spread evenly.
  4. Bake for 35 minutes, or until top is a golden brown. Wait until it is cooled completely before cutting and serving it.
