Ricotta and Citrus Waffles with Honey Maple Syrup
These yummy waffles include some healthy citrus in your traditional morning breakfast. I love the mixture of honey and syrup on top; it pairs so well with the ricotta and fresh fruit! The heartiness of a multi-grain waffle is my favorite, but feel free to use your own favorite waffle mix in its place.
Ingredients:
- Your favorite whole-grain or other waffle mix
- 1 1/2 cups of fresh ricotta
- 1 large grapefruit, peeled and segmented
- 1 large blood orange, peel and pith removed, sliced or segmented
- 1 Cara Cara orange, peel and pith removed, sliced or segmented
- 4 Clementines, peel and pith removed, sliced or segmented
- Honey and pure grade B maple syrup, for serving
(To properly segment your citrus, it is best to cut off the top and bottom of the fruit, giving yourself a nice flat surface to work with. Then using a sharp knife, slice off the peel in a downward pattern around the fruit, making sure to remove all the white pith. Now slice the outside of each segment to remove the meat of your citrus. I like to start on the edge closest to the uncut portion of fruit, then flip the segment and slice from the inside out, effectively peeling the second side of the pith off the segment. Then, like a book, turn the pith and move on to the next segment.)
Directions:
- Preheat a waffle iron and lightly coat it with butter or cooking spray. Cook waffles according to your iron (for standard-size Belgian waffles, fill each cavity with about 1/2 cup batter) until golden brown.
- Top each waffle with a dollop of ricotta and pieces of your three citrus fruits.
- Drizzle with a warmed mixture of equal parts honey and syrup; serve.
