Ingredients:

  • 4 ounces rice noodles, soaked in boiling water for 5 minutes to soften, then drained
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 2 teaspoons teriyaki sauce
  • 2 scallions, chopped
  • Salt and pepper

Directions:

Toss rice noodles with all the above ingredients and you’re done.

Goes great with Chicken Satay with Peanut Sauce and Cucumber Relish.
