Quinoa
Quinoa (pronounced keen-wah) is a quick and super-healthy side dish that is one of my favorites. It also makes a great topping for salads if there are any leftovers. Just two ingredients from Trader Joes make a fresh and delicious vegetarian dish. Quinoa is so healthy and it’s full of protein, unlike wheat or rice. It is also a good source of dietary fiber, magnesium, and iron.
Ingredients:
- 1 package quinoa
- 1 package of Trader Joe’s Rosemary Pecans and Cranberries
(I use 1 cup dry quinoa with half package of TJ nut mix.)
Directions:
- Prepare quinoa in a pot according to package instructions.
- Chop up nut mixture on cutting board.
- Add nut mixture to your warm quinoa and stir.
- Enjoy your healthy dish!

I have been thinking of trying a new quinoa recipe since my hubby isn't too keen on it. Maybe this will win him over! Sounds delish to me!
