Pumpkin Squares
My Grandma gave me this recipe! It reminds me of her—always a family favorite!
Crust
- 1 cup of flour
- 1/2 cup of oatmeal
- 1/2 cup of packed dark brown sugar
- 1/2 cup of butter
Filling
- 2 cups of pumpkin
- 1 can (13 ounces) of evaporated milk
- 2 eggs
- 3/4 cup of sugar
- 1 teaspoon of cinnamon
- 1/2 tsp. ginger
- 1/2 tsp. salt
- 1/4 tsp. cloves
Topping
- 1 cup of brown sugar
- 1 cup of chopped walnuts
- 1/4 cup of butter
- 2 tablespoons of flour
Instructions
- Preheat oven to 375 degrees.
- Grease and flour a 13″ x 9″ baking dish.
- Combine the first three ingredients for the crust, then cut in the butter. Press into the bottom of the baking dish. Bake for 12 to 15 minutes.
- While the crust is baking, combine all of the ingredients for the filling and beat at low speed until combined, then beat at medium speed for 3 minutes.
- Remove lightly browned crust from the oven and reduce heat to 350 degrees.
- Pour filling onto the crust and continue baking for 15 to 20 minutes.
- When done, remove from the oven and sprinkle the topping mixture onto the pumpkin squares and continue baking for 10 to 15 minutes or until golden brown.
Great with fresh whipped cream!
