pumpkin pie overnight oats
It’s Fall, which means give me pumpkin everything! I love all things pumpkin, but at the same time I still want to eat healthy. If you’re anything like me, you will love this recipe!

½ cup organic rolled oats
½ cup organic unsweetened vanilla almond milk
2 tablespoons pumpkin puree
1 teaspoon chia seeds
2-3 teaspoons maple syrup or sweetener of your choice
½ teaspoon cinnamon
¼ teaspoon pumpkin pie spice
½ teaspoon vanilla extract
Dash of sea salt
Chopped pecans (optional)
- Combine all ingredients into a jar or bowl that can be sealed. Stir well.
- Chill in the refrigerator overnight or at least 4 hours.
- Serve warmed up, or cold if you’re on the go!
