This is one of my favorite go-to’s for breakfast or a mid-afternoon snack. It’s quick, easy and helps me to fuel my body with healthier ingredients while still being able to slightly indulge. This recipe is for one large cookie, but it can be doubled and made into smaller bites if you like.

 

Ingredients

½ cup rolled oats

½ banana

½ scoop protein powder (I prefer vanilla flavored)

1 tbsp milk

1 tsp baking powder

1 tbsp coconut oil, melted

Dash of cinnamon

Handful of chocolate chips

 

 

Directions

Preheat oven to 350°

  1. In a mixing bowl, mash banana and stir in all ingredients.
  2. Cover baking sheet with parchment or a nonstick mat (silpat).
  3. Form into one large cookie or several small ones if you prefer.
  4. Bake 10-12 minutes or until done. Let cool. Enjoy!
