This retro cake was such a hit on Father’s day—butter, brown sugar, caramelized pineapple, and the most delicate delicious white cake you have ever tried! Trust me on this one. . . it is a keeper!

Serves 9

Ingredients:

Topping:

  • 1/4 cup butter
  • 1/2 cup brown sugar, packed
  • 1 can drained sliced pineapple
  • Maraschino cherries
  • Pecan halves (or walnut halves)

Cake batter:

  • 1 1/2 cup cake flour
  • 1 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1/3 cup shortening (Yes, I mean Crisco or another solid shortening.)
  • 1 egg
  • 1 teaspoon vanilla

Directions:

  • Place all the batter ingredients in a large bowl and mix on low speed for two minutes to combine, scraping the bowl.
  • Then, mix the batter on high speed for 4 minutes, scraping the bowl between each minute. Note: The batter will be thicker than most cake batters.
  • Melt butter over low heat in round 9 x 1 1/2-inch layer pan. Sprinkle brown sugar evenly over butter.
  • Place pineapple slice in center of pan. Cut remaining slices in half; arrange halves cut side out around center ring.
  • Place cherries and pecans or walnuts (I’m not a big fan of maraschino cherries) in center of pineapple slices and in spaces between slices.
  • Prepare cake batter. Pour evenly over fruit in pan. Bake at 350 degrees F for 35 to 45 minutes on the center rack of oven or until wooden pick inserted in center comes out clean.
  • Carefully invert cake onto serving plate while still hot. Let cake cool for a few minutes before removing pan. Serve warm with whipped cream.
