Pancetta-Wrapped Peaches with Basil and Balsamic
What a great way to say goodbye to the last of our warm weather fruits. Salty, crispy pancetta, fragrant basil, and mouth watering peaches grilled and drizzled with sweet balsamic vinegar.
This is a great appetizer that is worth the few extra minutes to prep, so I make it easier on myself by pairing it with a main course that doesn’t take long to prepare. Simply grilled lamb or pork chops would be delicious!
Ingredients:
- Sliced peaches or nectarines, ripe but firm
- Fresh basil leaves
- Pancetta, thinly sliced
- Slivers of Parmesan cheese
- Balsamic vinegar
Directions:
- Wrap wedges of fruit with basil leaves, a sliver of cheese, and a slice of pancetta.
- Grill until pancetta is seared and crispy.
- Drizzle with balsamic and serve as an appetizer or atop a bed of mixed greens.

What is pancetta? I'm not familiar with that. (it sounds good) Also where do you purchase it?

Pancetta is an Italian bacon that is cured instead of the american bacon which is smoked. It commonly comes in thin slices or in small cubes. For this recipe we use the thin slices of pancetta and wrap them around the peaches but another very common use for it is cubed in pasta carbonara along with ingredients like scrambled eggs, garlic, parmesan cheese and cooked pasta. Thin slices could also be placed on a pizza, prior to cooking it, or try a twist on the classic BLT by frying the thinly sliced pancetta in a pan first. I buy this Italian bacon at Trader Joe’s, but it can also be found at many local grocery stores usually by the deli section.
