Here is a simple, tasty, and healthy way to serve summer’s freshest asparagus. You won’t believe how roasting brings out their sweetness!

Ingredients:

  • 1 1/2 lbs. fresh asparagus, trimmed
  • 3 tablespoons olive oil
  • salt and pepper

Directions:

  • Preheat your oven to 500 degrees. Meanwhile wash and remove the tough ends on your asparagus spears by simply bending the stalks close to the root ends until they snap. This is the best way to know they will be tender and not fibrous when they are cooked.
  • Lay them out in a single layer on a cookie sheet. Brush them with some olive oil and season with salt and fresh ground pepper. Roast the asparagus until they are just tender when pricked with the tip of a knife.
  • The roasted asparagus should be ready to serve and enjoy in 7-12 minutes, depending on their thickness.
