This is a favorite recipe that is often requested and raved about at many a neighborhood gathering!

Ingredients:

  • 1 pound deboned chicken thighs, cut into 1/2-inch wide strips
  • 3 tablespoons canola oil
  • 4 tablespoons red miso
  • 1/2 cup mirin (Japanese sweet rice wine)
  • 6 tablespoons sugar
  • 4 tablespoons chicken stock
  • 3 tablespoons fresh ginger, minced
  • 2 cloves garlic, minced
  • 3 tablespoons green onions, chopped

Directions:

  1. In a wok, heat oil over medium high heat and brown chicken thigh pieces.
  2. Mix together remaining ingredients and add to chicken. Cover pan and simmer for another ten minutes.
  3. Serve over rice and top with additional chopped green onions.
