Minty Snow Cap Cookies
Every Christmas season, my family looks forward to these cookies. They are sweet and crunchy on the outside, and soft and chewy on the inside. With just the right amount of mint flavor, these cookies are the perfect addition to your holiday cookie platter—a Christmas tradition that your family and friends will look forward to every year!
What you will need:
- 10 oz. semi-sweet chocolate chips
- 1 1/4 cups flour
- 1/2 cup cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 stick unsalted butter, softened
- 1 1/2 cups light brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 to 1 teaspoon mint extract (depending on your taste to mint)
- 1/3 cup whole milk
- 1 1/2 cups granulated sugar
- 1 1/2 cups powdered sugar
- plastic wrap
Directions:
- Preheat oven to 350 degrees F. Melt chocolate chips in a pot on low heat, stirring occasionally so they don’t burn. Set aside and let cool. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Mix butter and brown sugar in a mixer on medium speed until light and fluffy, about 2–3 minutes. Mix in eggs, vanilla, and mint extract. Then add the melted chocolate. Reduce speed to low and begin adding the flour mixture in small batches, alternating with the milk, until all has been mixed in and a soft dough has formed. Divide the dough into 4 equal pieces and wrap each piece in plastic wrap. Refrigerate until firm, at least 2 hours.
- Using two bowls, put powdered sugar in one bowl and granulated sugar in the other. Take out one piece of wrapped dough and begin forming balls. I usually use a very small scooper. Balls should be about 1 inch round. Dip dough ball first in the granulated sugar, coating it completely. Then dip the dough ball in the powdered sugar and coat completely. Space the dough balls 2 inches apart on a cookie sheet lined with parchment paper.
- Bake until the surface of the cookies crack, about 14 minutes. Cool them on a cookie rack. Eat within 3 days.

Hi Jeanine, THANK YOU for this delicious recipe you shared. We have a bake off contest today at work and it will be my entry. But my problem is that my cookies didn't come out like yours in the picture (thick). Mine came out flat! I'm a novice when it comes to baking/cooking but followed your recipe well and I'm not sure what I did wrong. But it's sooooo delicious. Would love to do this again for my family's Christmas pot luck and I hope I could do it exactly (thicker) like the one on the picture. Thanks again!
