Lettuce Buttercups

Ingredients
- Fresh corn
- Grape tomatoes
- Green onion
- Basil
- Feta cheese, crumbled
- Buttercup lettuce
Dressing
- 1 tablespoon Tarragon
- 3 tablespoons Apple cider vinegar
- 2 tablespoons Extra-virgin olive oil
- Salt and pepper
Directions
- Cut kernels from ears of corn, if using whole ears.
- Chop tomatoes, onion, and basil.
- Whisk together dressing ingredients.
- Toss all ingredients except for lettuce in a bowl along with the dressing.
- Spoon mixture onto individual lettuce leaves.

Salads are a wonderful, healthy treat! There are so many variables. I'm not a fan of corn in a salad, but I love the idea of the buttercups! If I make them, I'd eliminate the corn, switch out the apple cider vinegar with balsamic, add red onion, baby spinach, a fruit and walnuts. What a cute little accent to lunch or dinner! Have you tired a similar concept where you scoop out a half of a large, ripe tomato and use that as the cup? I'm looking so forward to Harvest America! I'm so grateful for the Laurie ministries, I can't begin to explain the blessings the Lauies are to this hurting world. Thanks to you both! oxox
