Ingredients:

Crust:

  • 1 cup butter, softened
  • 2 cups flour
  • 1/2 cup confectioner’s sugar

Lemon Topping:

  • 4 large eggs
  • 1 3/4 cups sugar
  • Grated zest of 1 lemon
  • 4 tablespoons flour
  • 1/2 cup lemon juice

Directions:

  1. Preheat oven to 350 degrees F.
  2. Mix all the crust ingredients together in a medium bowl with your hands until well blended.
  3. Pat the mixture evenly in the bottom of a 9 x 13-inch pan. Bake for 30 minutes.
  4. While the crust is baking, beat the eggs in a medium bowl. Add the sugar and the lemon zest and mix thoroughly. Then add the flour and mix until it is incorporated.
  5. When the crust is done, remove the pan from the oven, then add the lemon juice to the sugar and flour mixture and pour over the warm crust. Bake for an additional 20 minutes.
  6. When cool, cut into squares and dust with sifted confectioner’s sugar. Delicious!
