Grilled Lamb Chops
As the weather begins to cool in the evenings, I start to crave preparing dinners that are, shall we say, a bit more substantial? Here is a delicious dinner you can make even if you are short of time. Lamb simply grilled with fresh rosemary. The same recipe can be used with two large 1/2″ center-cut pork chops, if you prefer.
Grilled Lamb Chops
Ingredients:
- 2 tablespoons of extra virgin olive oil
- 1 tablespoons of fresh rosemary leaves, coarsely chopped
- 1 teaspoon of fresh thyme leaves
- 1/2 teaspoon of sea salt
- Pinch of cayenne pepper
- 8-12 lamb chops (depending on the size and thickness of the chops), weighing 1 1/2 pounds
Directions:
Blend the oil, garlic, rosemary, thyme, salt and, cayenne pepper in a food processor that’s fitted with a metal blade, forming a paste. Rub the paste over the lamb chops and marinate at least 30 minutes or up to 4 hours. In a pinch you might also try simply sprinkling the lamb chops with the above ingredients before grilling.
Heat grill to medium-high heat.
Place chops on the grill and cook for approximately 3-4 minutes per side for medium. If you are substituting pork chops, the suggested cooking time is approximately 7-8 minutes each side.
